Suppliers
We choose only ingredients from small and mediumsized Czech farmers who farm with respect for the soil and for those who will come after us. Some organic exotic fruits have their place here too.
Poultry
Chickens, ducks, turkeys and geese come to us from farms that raise them with care from chick to maturity. For example, at Loužná farm, where the birds grow with plenty of space and without stress. At Letařovice they graze outdoors; at Martin Svoboda’s farm they roam freely in his orchard; and at the Tůma family farm their care is a family affair. From the Kořínek family’s Nový Dvůr farm we receive honest, wellraised turkey meat.
Eggs
Our eggs are laid by pasturefed hens, many of them living in mobile field coops. They come from farms like Barbora, Kyselovic hospodářství, Vejce Zlouky and Jesenický grunt.
Fruit and vegetables
We work with farmer Hanka Součková and the Holejšovský family farm, and we also source vegetables from the Šlapanice and Zdraví z pole farms. Fruit is picked for us at the Schauer and Sady Sv. Prokopa orchards, and at Biozahájí farm. Our seasonal selection of carefully grown Czech produce is regularly complemented by exotic fruit from Sicily, Crete, Italy and the Canary Islands — harvested only when perfectly ripe.
